Equipment

  • 1 wooden spoon

Ingredients

  • 1 large onion (finely chopped)
  • 1 large red onion (chopped)
  • 8 cups beef broth
  • 2 tbsp caraway seeds
  • salt and pepper to taste
  • 1 lb sliced kielbasa sausage
  • 3 tbsp Hungarian paprika powder
  • 1 cabbage (thinly sliced)
  • 4 garlic cloves (minced and smashed)
  • 1 lb bacon (cut into small pieces)
  • 1 lemon (juiced)
  • Sour cream (For serving)

Instructions

  • In a pan, take the pieces of bacon. Cook over medium heat until it is almost crispy. 
  • Now add the onions (both types) and sauté over medium heat until they are soft and translucent. 
  • Reduce the heat to low, sprinkle the paprika powder, and add half a cup of water. Now, increase the heat to medium and keep stirring with the wooden spoon until the mixture becomes thin. 
  • Add the sliced kielbasa sausage and mix it with the mixture. Then add the sliced cabbage, broth, caraway seeds, and smashed garlic cloves. Bring to a boil.
  • Reduce heat to low and let simmer for one hour. Keep in the heat until the cabbage is completely broken down and soft. 
  • Add thoroughly salt, lemon juice and pepper. Taste and adjust seasoning as necessary. 

Notes

– If you want a more intense flavor, you can roast the garlic cloves and caraway seeds before adding them to the soup.
– You can also use sauerkraut in this soup instead of cabbage for a more authentic taste.
– For a more hearty soup, add some diced potatoes or noodles during the last 30 minutes of cooking.
– There is no need to pre-cook the cabbage. 
– To make the soup thicker, you can use all-purpose flour.
– Try to use fresh cabbage to make the soup more healthier. Remove the core and slice the cabbage into thin, small strips.
