Ingredients

  • 2 cups of roasted macadamia nuts
  • 2 cups of rice flour
  • 6 cups of vegetable oil
  • 1/2 cup of sugar
  • 1 teaspoon of salt

Instructions

  • In a large pan over medium heat, roast macadamia nuts until fragrant, stirring occasionally. Remove from heat, cool, and chop into small pieces.
  • In a separate bowl, whisk rice flour, sugar, and salt. Add vegetable oil and mix until crumbly. Gradually add water, stirring until it forms dough.
  • Grease or line a square/rectangular baking dish.Press dough evenly into the dish. Bake at 350°F for 20-25 mins, until edges are golden brown.
  • Let cool briefly, then cut into bite-sized pieces.

Notes

  • For added flavor, you can also mix in some vanilla extract or cinnamon to the dough mixture.
  • Feel free to adjust the amount of sugar according to your preference for sweetness.
  • This recipe can easily be doubled or tripled to make a larger batch for parties or gatherings.
  • Instead of using vegetable oil, you can also use coconut oil as a healthier option.
