Equipment

Ingredients

  • 1/3 cup light brown sugar
  • 12 large eggs
  • ½ teaspoon almond extract
  • Zest of 1 lemon
  • 1 tablespoon vanilla extract
  • 1 8-ounce brick brick cream cheese
  • 1 1/2 cups frozen wild blueberries
  • 3 cups milk
  • 6 large croissants cut into cubes
  • ½ cup heavy cream
  • teaspoon ground nutmeg
  • Maple syrup for serving

Instructions

Step 1: Prepare The Baking Dish

  • Start by coating a 9×13 baking dish with nonstick cooking spray to prevent the French toast from sticking during baking.

Step 2: Layer Croissants And Brick Cream Cheese

  • Evenly spread half of the cubed croissants in the bottom of the prepared baking dish. Then, using a hand mixer, blend together light brown sugar, brick cream cheese, and lemon zest until smooth. Drop spoonfuls of the brick cream cheese mixture over the croissants, reserving a portion for later use.

Step 3: Add Blueberries

  • Sprinkle frozen wild blueberries over the brick cream cheese layer, reserving some for the top layer.

Step 4: Repeat Layers

  • Cover the blueberries with the remaining cubed croissants. Then, evenly distribute the reserved brick cream cheese mixture and blueberries over the top layer.

Step 5: Prepare Egg Mixture

  • In a separate bowl, whisk together large eggs, milk, vanilla extract, almond extract, heavy cream, and ground nutmeg until thoroughly combined.

Step 6: Soak And Refrigerate

  • Pour the egg mixture evenly over the layers of croissants in the baking dish, ensuring all the bread is soaked. Gently press down on the croissants with a spatula to help them absorb the mixture. Cover the baking dish with plastic wrap and refrigerate overnight to allow the flavors to meld and the bread to absorb the custard mixture.

Step 7: Bake And Serve

  • The next day, preheat your oven to 350°F (175°C). Remove the plastic wrap from the baking dish and bake the French toast for 45 to 50 minutes, or until the top is golden brown and the center is set. Once baked, let it cool slightly before serving warm with maple syrup and powdered sugar, if desired. Enjoy your delicious blueberry cheesecake French toast!

Notes

  • Chill the French toast overnight for the best flavor and texture.
  • Use fresh blueberries if wild blueberries are not available for a slightly different flavor profile.
  • Experiment with different types of bread, such as brioche or challah, for a unique twist on this classic dish.
  • Feel free to customize the toppings with chopped nuts, a drizzle of honey, or a dusting of powdered sugar for added sweetness and crunch.
  • To make this dish even more decadent, top it with a scoop of vanilla ice cream or a dollop of lemon curd for an extra burst of flavor.
