Instructions

  • Preheat the oven to 350°F (175°C). Line two cookie sheets with parchment paper and set aside. In a large bowl, mix together the oats, butter, dark brown sugar, and semi-sweet chocolate chunks until well combined.
  • Beat in the eggs one at a time until completely incorporated. Add in the honey and vanilla extract and mix until combined.
  • In a separate bowl, whisk together the flour, granulated sugar, baking soda, baking powder, and salt, then add to the wet ingredients and mix until just combined. Finally, fold in the milk chocolate chunks and shorten until evenly distributed.
  • Using a 2 Tbsp cookie scoop, drop the dough onto the prepared cookie sheets about 2 inches apart. Bake for 10-12 minutes or until golden brown and let cool on the baking sheets for 5 minutes before transferring to a cooling rack to cool completely. 

Notes

• For chewier cookies, add an additional tablespoon of butter.
• If you don’t have semi-sweet chocolate chunks, feel free to use semi-sweet chocolate chips.
• Be careful not to overbake the cookies or your cookies will be dry.
