  • 1 lb ground beef
  • 1 quart vegetable broth
  • 2 cans free roasted tomato
  • 2 cups dried pasta noodles
  • 1 tbsp olive oil
  • 1 pck dry onion soup mix
  • 2 cup water
  • 1 pck frozen mixed vegetables

Instructions

  • Take a large pot. Add 2 cups of water and 1 tbsp olive oil. Then, include the beef in the pot and cook it over medium heat. Break it into crumbles until it is no longer pink. This will take approximately 6-8 minutes.
  • Then, add the onion soup mix, broth, tomatoes, and frozen veggies to the pot. Stir to combine.
  • Let the mixture come to a boil.
  • Finally, add the pasta noodles. Cook your pasta noodles according to the package instructions. Once they are done, reduce the heat to low and cover the pot. Allow the vegetables to simmer until they are tender, which should take 10-15 minutes.
  • The food is ready to serve.

Notes

  1. I use extra virgin olive oil in this recipe. You can use any type of olive oil. 
  2. If you want a creamier soup, you can add some milk or cream to the mixture.
  3. If you are looking for a non-beef option, you can use ground turkey or ground chicken.
  4. Add some spice to your soup by adding a pinch of black pepper, cayenne pepper, or red pepper flakes.
  5. Make this soup your own by adding your favorite vegetables. Some other great options include corn, peas, green beans, and carrots.
