Ingredients

For The Pumpkin Bread

  • cups all-purpose flour
  • 1 cup pumpkin puree
  • ½ cup white sugar
  • ½ cup packed light brown sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • ¼ teaspoon salt

For The Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 3 cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  • Mixing the Ingredients
    Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and set aside.
    In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, allspice and salt. Set aside.
    In a large bowl with an electric hand mixer or stand mixer fitted with the paddle attachment, beat together the pumpkin puree, white sugar, and light brown sugar until combined. Add in the vegetable oil and eggs and beat until well combined.
    Slowly add in the dry ingredients to the wet ingredients and mix until just combined. Be sure not to overmix!
  • Baking
    Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick inserted into the center of the loaf comes out clean.
    Allow to cool completely in the pan before frosting.
  • For The Cream Cheese Frosting
    In a medium bowl with an electric hand mixer or stand mixer fitted with the paddle attachment, beat together cream cheese and butter until light and fluffy. Add in powdered sugar and vanilla extract and beat until combined.
    Spread on top of cooled bread and enjoy!

Notes

  • Make sure the ingredients are at room temperature before baking. Cold ingredients will not combine well, resulting in a dense loaf of bread.
  • Be sure to use pure pumpkin puree (not pumpkin pie filling).
  • Do not overmix the batter! This can result in a tough and dense loaf.
  • Allow the bread to cool completely before frosting – otherwise, the cream cheese frosting will melt off.
