Ingredients

  • 1 lb of juicy ripe fresh tomatoes, bursting with vibrant flavor and natural sweetness, creating a rich and tangy base for the salsa.
  • 1 teaspoon of salt bringing out the natural flavors of each ingredient and balancing the overall taste profile with its savory essence.
  • 1/2 large onion thinly sliced to add a subtle crunch and a hint of pungency, enhancing the overall depth of flavors.
  • 1 teaspoon of garlic minced, releasing its aromatic allure and infusing the salsa with a subtle yet distinct garlicky undertone, enhancing the overall depth of flavor.
  • 1 jalapeno pepper providing a fiery kick and a touch of smokiness, adding a delightful heat that tantalizes the taste buds.

Instructions

  • First, preheat your oven’s broiler to high and then move an empty baking sheet rack closer to the top of the inside of the oven.
  • Afterward, take your tomatoes, onion slices, and jalapenos and place them on a near-top hot baking sheet.
  • Put veggies in the oven under the broiler until lightly burned/charred on all sides; this won’t take long.
  • Once done, remove from heat immediately and let cool before beginning the next step
  • To make the salsa, start by removing the stems from the jalapenos and the cores from the tomatoes. Place all of the cooled ingredients into a blender with cilantro, garlic, salt, and pepper to taste.
  • Blend for around 10 seconds or until it reaches your desired consistency. Once you’ve done that, give it a taste test and see if it needs additional salt or pepper. If so, season to taste.
  • Then pour the salsa into a container and stick it in the fridge overnight to chill.

Notes

Something important you need to know about this delicious salsa recipe.
– Once the salsa sits for a while, the tomatoes will break down. If you left the seeds in, they will make the salsa watery, with a pool of tomato-flavored liquid at the bottom of your bowl. Nobody wants to scoop that onto a chip. So it is better to remove the seeds.
– You don’t have to peel the tomatoes when making salsa. However, some varieties of tomatoes have skins that become tough and bitter during cooking. So, it is better always that take the time to peel. Most fresh tomatoes contain lime juice.
– When the tomatoes have cooled off, you’ll observe that there is quite a bit of liquid left in the bowl. If you add it all back into the salsa, it will become sort of watery.
I chose not to add any back in this time and liked how thick it was. It also thickens as it sits in the fridge, so hold onto that liquid just in case you want to thin it out later.
