This pasta dish combines classic Caribbean flavors, like jerk seasoning and tropical fruit, with our signature chicken and penne pasta for an unforgettable combination of flavors. 
The jerk seasoning we use gives the chicken a smoky, spicy flavor. We top it off with crunchy bell peppers and onions for an extra layer of flavor.

Ingredients

  • 1/4 cup of low-sodium chicken broth providing a flavorful and savory base for the dish.
  • 1 tablespoon of extra-virgin olive oil providing a rich and fruity taste, while also acting as a cooking medium.
  • 1/4 teaspoon of kosher salt enhancing the overall taste and bringing out the flavors of the other ingredients.
  • 1 1/2 tablespoons of jerk seasoning infusing the dish with a spicy, aromatic, and complex flavor profile.
  • 1/2 orange bell pepper sliced, adding a vibrant and sweet element to the dish.
  • 1/2 jalapeno seeded and minced, contributing a spicy and fiery kick to the dish.
  • 1/6 tablespoons of sliced green onions offering a mild onion flavor and a pop of freshness.
  • 1 1/2 pieces of boneless skinless chicken breasts, offering lean and tender protein to the recipe.
  • 1/8 tablespoons of chopped parsley adding a fresh and herbaceous touch, enhancing the visual appeal and taste.
  • 1/4 cup of freshly grated Parmesan creating a rich and cheesy layer, adding depth and flavor.
  • 3/8 tablespoons of heavy cream adding a luscious and velvety texture to the sauce.
  • 1/2 pound of penne serving as a hearty and satisfying pasta component.
  • 1/2 red bell pepper sliced, adding a vibrant and slightly sweet taste to the dish.
  • 1 1/2 garlic cloves minced, providing a pungent and aromatic note, enhancing the overall taste.
  • 1/2 cup of diced onion bringing a savory and aromatic flavor to the recipe.

Instructions

  • To infuse the chicken breasts with flavor, season them on both sides with 2 tbsp jerk seasoning and let them rest in the refrigerator for a minimum of 1 hour or up to 8 hours.
  • Preheat your oven to 400 F.
  • Bring the skillet to medium heat and add 1 tbsp of olive oil. Once heated, add chicken and cook for 2-3 minutes or until golden brown.
  • Turn the chicken over and cook for an additional 3 minutes on its other side.
  • Now, transfer the frypan from the stovetop to the oven. And roast the chicken for 25-30 minutes. You can use a meat thermometer to ensure it reaches the optimal internal temperature of 165 F to get the preferred tenderness. 
    But using the thermometer is totally optional.
  • Take a pot. Add water and salt to it. Then, cook your pasta for around 7-8 minutes. Once it’s ready, drain it thoroughly and place it aside.
  • Once the chicken is finished roasting, take it out of the oven, place it on a platter and cover it to maintain its savory goodness
  • Set a skillet over medium-high heat and pour in the remaining olive oil. Then, sauté the bell peppers and onions for at least 4 minutes until they are softened.
  • Next, toss the jalapeno, green onions, and garlic into the pan. Let them cook for two minutes before pouring in your chicken broth to bring it all up to a boil.
  • Reduce the heat to low and stir in the heavy cream, Parmesan and salt. Then, add the pasta to the mixture.
  • Cut the chicken into thin slices and place them atop the pasta. For an extra flourish, sprinkle on some chopped parsley and sliced green onion to complete this entire dish.

Notes

  • For a perfect pasta dish, you should aim to cook it Al dente so that its texture remains intact when eaten. You can modify the jerk seasoning according to your flavor preferences.
  • Make this with red and orange bell pepper, or substitute in whatever you have on hand! And if the taste calls for it, don’t hesitate to sprinkle more Parmesan cheese.
  • Indulge in the pasta without guilt – each serving is typically 1,050 calories; however, this can be significantly decreased with a few simple modifications.
