Ingredients

  • 2 tomatoes
  • cups mushrooms
  • 20 ounces of spinach
  • 12 slices bacon
  • ½ cup sliced red onions
  • 2 cups croutons
  • 1 cup cranberries dried
  • 2 hard-boiled eggs
  • 1 cup shredded cheese
  • Poppyseed dressing

Instructions

  • Chop tomatoes, mushrooms, spinach, red onions, and bell peppers into small pieces. Place them in a large bowl.
  • Fry bacon until crispy, then chop it into small pieces. Set aside.
  • In a separate bowl, whisk together oil, vinegar, sugar, mustard, and poppy seeds to make the dressing.
  • Add chopped bacon, croutons, dried cranberries, hard-boiled eggs, and shredded cheese to the vegetable bowl.
  • Drizzle the poppyseed dressing over the ingredients and gently toss until well-coated.
  • Taste and adjust with salt, pepper, or extra dressing as desired.

Notes

  • If you’re using hard-boiled eggs, make sure they are boiled and peeled before adding them to the salad.
  • For a heartier meal, add some cooked quinoa or couscous to the salad.
  • If you don’t have poppyseed dressing on hand, feel free to substitute it with your favorite vinaigrette or creamy dressing.- If you’re not a fan of feta cheese, try substituting it with crumbled goat cheese.
