Ingredients

For the rice waffles:

  • – Cooking spray
  • – 1 tablespoon rice vinegar
  • – 1 tablespoon mirin
  • – 1 cup cooked white rice or sushi rice, room temperature
  • – 1/2 tsp white granulated sugar
  • – Pinch of salt

For the sushi mixture:

  • – ½ pound sushi-grade salmon cubed
  • – 1 teaspoon fresh minced ginger
  • – 2 tablespoons reduced-sodium soy sauce
  • – 1 tablespoon rice vinegar
  • – ½ pound sushi-grade tuna cubed
  • – ½ teaspoon sesame oil

For assembling the sushi waffles:

  • – 1 large avocado halved, pitted and mashed
  • – 2 tablespoons green onions sliced
  • – 1 teaspoon Furikake seasoning
  • – 1 tsp lemon juice garnish
  • – ½ tsp roasted sesame seeds garnish
  • – 2 teaspoons salmon roe caviar

For the aioli sauce:

  • – 1 teaspoon Sriracha sauce
  • – 1 tablespoon mayonnaise

Instructions

Step 1: Prepare The Rice Waffles

  • Preheat your waffle iron and lightly coat it with cooking spray.
  • In a mixing bowl, combine the cooked white rice, rice vinegar, mirin, sugar, and salt. Mix well until the rice is evenly coated with the seasonings.
  • Scoop a portion of the rice mixture onto the preheated waffle iron, spreading it out evenly to cover the surface.
  • Close the waffle iron and cook for about 5-7 minutes, or until the waffle is golden brown and crispy. Repeat this step for the remaining rice mixture, making sure to spray the waffle iron between each batch to prevent sticking.

Step 2: Prepare The Sushi Mixture

  • In a separate bowl, combine the cubed salmon and tuna with the reduced-sodium soy sauce, rice vinegar, sesame oil, and minced ginger. Gently mix everything together, ensuring that the fish is evenly coated with the seasonings.
  • Let the sushi mixture marinate for about 10 minutes to allow the flavors to meld together.

Step 3: Assemble The Sushi Waffles

  • Take a rice waffle and spread a generous amount of mashed avocado on top. This acts as the creamy base for the sushi ingredients.
  • Arrange a portion of the sushi mixture on the mashed avocado, ensuring an even distribution of the fish.
  • Sprinkle sliced green onions, Furikake seasoning, lemon juice, roasted sesame seeds, and salmon roe over the sushi mixture.
  • Drizzle the aioli sauce (made by combining Sriracha sauce and mayonnaise) on top of the sushi waffle.
  • Repeat these steps for the remaining rice waffles and sushi ingredients.

Notes

  • – To make the rice waffles even crispier, you can brush the waffle iron with a thin layer of oil instead of using cooking spray.
  • – Sushi waffles are best enjoyed immediately after assembly to maintain their crispness. If you need to make them in advance, you can store the rice waffles separately and assemble them just before serving.
  • – If you don’t have access to sushi-grade salmon and tuna, you can use cooked or smoked salmon and canned tuna as alternatives.
