  • 2 tablespoons of olive oil
  • 8 cups of chicken or vegetable broth
  • 2 onions diced
  • 2 carrots diced
  • 4 cups of red lentils
  • Lemon wedges for serving
  • 2 teaspoons of paprika
  • 4 cloves of garlic minced
  • 2 teaspoons of cumin
  • salt and pepper according to your preference


  • Heat olive oil in a large pot.
  • Sauté onions, garlic, and carrots for 5 minutes until softened.
  • Add red lentils and stir to coat in the onion mixture.
  • Pour in 8 cups of chicken or vegetable broth and bring to a boil.
  • Simmer for 20-25 minutes until lentils are tender.
  • Season with cumin, paprika, salt, and pepper to taste.
  • Blend the soup to your preferred texture.
  • Serve hot with lemon wedges on the side for a zesty touch.
