Instructions

  • Preheat the oven to 400°F.
  • Mix together the cumin, cinnamon, turmeric, cayenne pepper, paprika, garlic powder, salt and pepper in a small bowl.
  • Place the potato chunks into a large bowl and sprinkle with the spice mix from step two. Toss to coat the potatoes evenly.
  • Place the potatoes on a parchment-lined baking sheet in an even layer. Drizzle with olive oil and bake for 40 minutes, flipping halfway through to ensure even cooking.
  • Once cooked, remove from the oven and top with chopped cilantro before serving.

Notes

• To ensure crispiness, cut the potatoes into small, uniform pieces.
• If you want a spicier dish, add more cayenne pepper or paprika for heat. 
• For added flavor, mix in a tablespoon of chopped parsley or rosemary when tossing the potatoes with the spice mixture. 
• To prevent the potatoes from sticking to the baking sheet, use parchment paper.
