Equipment

Ingredients

  • 2 cups of water or more as desired providing a hydrating element that helps to balance the intensity of the peppers, while also allowing the flavors to meld together, resulting in a harmonious and well-rounded dish.
  • 2 large bulbs of garlic bursting with pungent and aromatic flavors, infusing a rich and savory taste that complements the heat of the peppers and adds complexity to the recipe.
  • 2 medium white onions sliced in half, imparting a subtle sweetness and a crisp texture when cooked, enhancing the overall depth of the dish.
  • 16 ounces of fiery and intense Carolina Reaper peppers known for their extreme heat and distinctive fruity flavor, adding a scorching sensation to any dish.
  • 1 teaspoon of salt or more to taste acting as a flavor enhancer, intensifying the natural flavors of the ingredients and bringing out their full potential.
  • 6 tablespoons of good quality vinegar lending a tangy and acidic note that balances the heat of the Carolina Reaper peppers, creating a perfect harmony of flavors.

Instructions

  • First, preheat your oven to 400 degrees Fahrenheit and place the Carolina Reaper peppers, garlic, and onion on a baking sheet.
  • Then bake all of them for 15-20 minutes or until the skins slightly char. Monitor carefully to avoid burning.
  • At this point, you have to put roasted vegetables into a food processor, along with vinegar and salt. Mix until chunky.
  • Add half a cup of water and blend until the sauce reaches the desired consistency.
  • Now, strain if necessary, and then pour them into sterilized bottles and store them for later use.
  • Allow to sit and meld flavors before serving. Serve it with your favorite savory dish.

Notes

  • Wear gloves when handling peppers, as they can irritate your skin.
  • Strain the sauce to remove any large chunks of vegetables if desired.
  • Adjust the thickness of your sauce by adding more water as needed.
