Ingredients

  • Oil
  • 1 and 1/2 cup buttermilk.
  • 2 eggs.
  • 2 cups of Cornmeal (Self Rising).
  • 1 tbsp of granulated sugar.

Instructions

  • Preheat your oven to a sizzling 400°F (200°C).
  • In a large bowl, carefully whisk together the cornmeal, granulated sugar, and oil until thoroughly combined.
  • Incorporate the eggs and buttermilk into the mixture until everything is perfectly blended.
  • Grease a skillet or frying pan with a light coat of oil.
  • Pour the cornbread batter into the skillet and distribute it evenly across the surface.
  • Place in the oven and bake for 25 minutes, or until its top is beautifully golden brown.
  • Remove from the oven and allow to cool for 10 minutes before serving up.

Notes

• If you don’t have self-rising cornmeal on hand, you can use regular cornmeal and add 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of baking soda to the dry ingredients. 
• Try adding different herbs or spices to the batter for some extra flavor.
• For a gluten-free option, substitute the all-purpose flour with almond or coconut flour.
