Equipment

  • knife
  • Chopping board
  • spoon
  •  Mixing tray
  • Blender

Ingredients

  • 32 ounces of Kale
  • 1/2 cup of sundried tomato
  • 2 tsp of garlic powder
  • 2 tbsp olive oil
  • 4 tbsp nutritional yeast
  • 2 pieces of fresh sliced tomato
  • Red cayenne pepper
  • 2 pcs Avocado
  • 1 cup Chopped red onions
  • 1 cup Mayonnaise
  • Bac’n Buds
  • Tortillas or wrap

Instructions

  • Preheat your oven to 350°F.
  • Wash and dry the kale, then tear it into small pieces (you should have about 7-8 cups of kale). Place in a large mixing bowl.
  • Drizzle the olive oil over the kale and massage it with your hands until all the leaves are evenly coated.
  • In a blender, add the sundried tomato and nutritional yeast and blend until you have a paste-like consistency.
  • Pour the paste over the kale in the bowl and massage it into all of the leaves. Sprinkle with garlic powder, red cayenne pepper, and Bac’n Buds.
  • Line a baking sheet with parchment paper and spread the kale in an even layer across it. Bake in the oven for 12-15 minutes or until crispy.
  • Assemble your wrap by adding all of your favorite ingredients: chopped red onions, sliced tomatoes, avocado, mayonnaise, and cooked kale chips to a tortilla or wrap.
  • Fold up the sides of the wrap.

Notes

• For a healthier version, you can use vegan mayonnaise or a Greek yogurt-based dressing instead of mayonnaise.
• To add more flavor and nutrition, try adding chopped mushrooms, red peppers, and carrots.
• You can make the kale chips ahead of time and store them in an airtight container for up to 3 days.
• To make your wrap spicier, try adding a sprinkle of red pepper flake or crushed chili peppers.
• For an extra kick, add some hot sauce or pickled jalapeños to the wrap.
