Equipment

Ingredients

  • 6 pounds chicken wings
  • 4 tablespoons olive oil or vegetable oil
  • Fire-eater rub to taste

For making sauce

  • 1/2 cup Frank's red hot sauce
  • 2/3 cup unsalted butter, melted
  • 2 tbsp light corn syrup
  • 2 cans mango nectar
  • Habanero sauce

Instructions

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • Place chicken wings onto the prepared baking sheet and season evenly with fire-eater rub. Drizzle vegetable oil over the wings, then use your hands to toss them until they are fully coated.
  • Bake for 45 minutes, flipping the wings halfway through.
  • While the wings are baking, prepare the sauce. Combine the hot sauce, habanero sauce, corn syrup, butter, and mango nectar in a small pot over low heat. Stir continuously until all of the ingredients have melted together and formed a thick sauce.
  • Once the wings are finished cooking, remove them from the oven and place them in a large bowl. Pour the prepared sauce over top of the wings and toss to coat evenly.
  • Serve with your favorite dipping sauces.

Notes

• If you want to add more heat, try adding an extra pepper or some additional hot sauce.
For a less spicy version, reduce the amount ofbanero sauce and use milder hot sauces such as buffalo or barbecue.
• This dish can be served with classic accompaniments such as ranch or blue cheese dressing, celery sticks, and carrots.
• Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, place back on a baking sheet and bake at 375°F for 10-15 minutes. 
• If you are pregnant, it is typically advised to avoid foods with high levels of spiciness. However, if you are craving the flavor and heat of this dish, try using milder hot sauces such as buffalo or barbecue and reduce the amount of habanero sauce.
• If you do not have mango nectar, substitute it for mango puree.
