Flavor God Jerk Chicken Recipe

Ingredients
  

  • 2 chicken breasts, skinless and boneless
  • ½ teaspoon salt
  • 4 cups mixed salad greens, washed and patted dry
  • 1 avocado, sliced
  • 1 tablespoon jerk seasoning
  • ½ cup fresh pineapple, diced
  • 1 ripe mango, diced
  • ½ red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, peeled and diced
  • ¼ cup cilantro, chopped
  • Lime Vinaigrette1/3- 1/2 cup extra virgin olive oil
  • ¼-1/2 teaspoon cracked black pepper
  • 1 lime, zested and juiced
  • 1-2 tablespoons honey
  • 1 teaspoon garlic, minced
  • ¼- 1/2 teaspoon salt

Instructions
 

  • Rub the chicken breasts with salt and jerk seasoning. Place them on a plate and refrigerate for at least 30 minutes or overnight if desired.
  • Preheat the grill to medium heat (about 350 degrees F). When ready, lightly oil the grate and place chicken breasts on it. Close the lid and cook for 7-10 minutes, flipping once in between. Once cooked through, remove from grill and let cool slightly before slicing into strips.
  • In a large bowl, combine the mixed greens, avocado slices, pineapple chunks, mango cubes, red onion slices, bell pepper slices, cherry tomatoes, cucumber chunks, and cilantro.
  • In a small bowl, whisk together the extra virgin olive oil, black pepper, lime zest and juice, honey, garlic, and salt until smooth and creamy.
  • Pour the vinaigrette over the salad and gently toss until everything is evenly coated.
  • Add the sliced chicken strips to the salad and toss once more. Serve with extra vinaigrette on the side, if desired.

Notes

  • Allow the chicken to marinate overnight for the best flavor and texture.
  • Use a cast iron skillet or grill pan for cooking the chicken. This will help to ensure that it cooks evenly and gets nice and crispy.
  • If you like your jerk chicken extra spicy, feel free to add more of the jerk seasoning to your marinade.
  • Use a mix of fresh herbs and spices if you want to customize the flavors even further.
  • Serve with a side of white rice, green beans, or roasted potatoes for a complete meal.
  • Make sure to let the chicken rest for at least 5 minutes after cooking before serving.
