Ingredients

  • 1/4 of a red bell pepper thinly sliced, delivering a vibrant pop of color and a crisp texture
  • 2 cups of vibrant mixed salad greens meticulously washed and gently dried, providing a refreshing and nutritious base
  • 1/2 creamy and buttery avocado thinly sliced, adding a velvety texture and a touch of richness
  • 1/2 tablespoon of aromatic jerk seasoning infusing the chicken with a tantalizing blend of spices and heat
  • 1/4 cup of fresh and juicy pineapple diced, offering a burst of tropical sweetness
  • 1/2 ripe and succulent mango diced, lending a delightful fruity note to the salad
  • 1/8 to 1/4 teaspoon of cracked black pepper adding a subtle hint of spiciness and depth of flavor
  • 1/4 of a red onion thinly sliced, providing a mild and tangy flavor that complements the other ingredients
  • 1 succulent chicken breast skinless and boneless, ensuring a lean and tender protein source
  • 1/4 teaspoon of salt perfectly balanced to enhance the flavors of the dish
  • 1/8 to 1/4 teaspoon of salt ensuring the perfect balance of flavors in the dressing.
  • 1/4 of a cucumber peeled and diced, offering a refreshing crunch and a cool element to the salad
  • 1/8 tablespoon of aromatic cilantro finely chopped, imparting a fresh and herbaceous aroma
  • 1/6 to 1/4 cup of extra virgin olive oil drizzled generously, creating a smooth and luscious dressing
  • Zest and juice of 1 lime providing a zesty and tangy punch to the vinaigrette
  • 1-2 tablespoons of honey balancing the acidity with a touch of natural sweetness
  • For the Lime Vinaigrette:
  • 1/2 teaspoon of minced garlic infusing the vinaigrette with a savory and aromatic note
  • 1/4 cup of plump and flavorful cherry tomatoes halved, adding bursts of juicy sweetness

Instructions

  • Rub the chicken breasts with salt and jerk seasoning. Place them on a plate and refrigerate for at least 30 minutes or overnight if desired.
  • Preheat the grill to medium heat (about 350 degrees F). When ready, lightly oil the grate and place chicken breasts on it. Close the lid and cook for 7-10 minutes, flipping once in between. Once cooked through, remove from grill and let cool slightly before slicing into strips.
  • In a large bowl, combine the mixed greens, avocado slices, pineapple chunks, mango cubes, red onion slices, bell pepper slices, cherry tomatoes, cucumber chunks, and cilantro.
  • In a small bowl, whisk together the extra virgin olive oil, black pepper, lime zest and juice, honey, garlic, and salt until smooth and creamy.
  • Pour the vinaigrette over the salad and gently toss until everything is evenly coated.
  • Add the sliced chicken strips to the salad and toss once more. Serve with extra vinaigrette on the side, if desired.

Notes

  • Allow the chicken to marinate overnight for the best flavor and texture.
  • Use a cast iron skillet or grill pan for cooking the chicken. This will help to ensure that it cooks evenly and gets nice and crispy.
  • If you like your jerk chicken extra spicy, feel free to add more of the jerk seasoning to your marinade.
  • Use a mix of fresh herbs and spices if you want to customize the flavors even further.
  • Serve with a side of white rice, green beans, or roasted potatoes for a complete meal.
  • Make sure to let the chicken rest for at least 5 minutes after cooking before serving.
