Equipment

  • 1 Nonstick cooking spray
  • 2 Measuring cups and spoons
  • 1 Blender
  • 1 Large Bowl
  • 1 Griddle or frying pan

Ingredients

  • 2 scoops Herbalife Formula 1 Healthy Meal Nutritional Shake
  • 2 scoops Protein Drink Mix (PDM)
  • 2 tbsp smooth peanut spread Optional
  • 2 large eggs
  • Dash cinnamon
  • 1/3 cup water

Instructions

  • In a blender, place all ingredients and blend until smooth.
  • Place a frying pan on the stove over medium heat. When the pan is hot, spray a little bit of nonstick cooking oil to coat the bottom of the pan.
  • Pour about ¼ cup of batter onto the frying pan and spread it out to form a pancake. When bubbles start to form on the surface of the pancake, and the underside becomes brown, flip it over and cook for a few more seconds.
  • Cook the second side of the pancake until it is well cooked and brown.
  • Repeat these steps until you finish all the remaining batter.
  • Serve the pancakes straight from the pan with your favorite toppings. I like to top mine with fresh berries or fruits, a little bit of sugar-free syrup, and a dollop of whipped cream.

Notes

- If you want to make the pancakes ahead of time, you can prepare the batter and store it in the fridge for up to 24 hours.
- When cooking the pancakes, use a nonstick pan or griddle so you don’t have to use too much oil.
- You can also use this batter to make waffles! Just pour the batter into the waffle iron and cook according to the manufacturer’s instructions.
- If you’re looking for a lower calorie option, you can use unsweetened applesauce or mashed bananas in place of the oil.
