Equipment

  • Air fryer

Ingredients

  • 2 teaspoons cornstarch
  • 16 oz. block of extra-firm tofu drained and pressed for 30 minutes, then cut into 1-inch cubes
  • ½ tablespoon tamari or liquid aminos
  • ½ teaspoon fine sea salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon nutritional yeast
  • ½ teaspoon toasted sesame oil
  • ½ teaspoon dried onion flakes

Instructions

Step 1: Press the Tofu

  • To ensure the tofu crisps up beautifully, it’s essential to press it. Start by draining the tofu and wrapping it in a clean towel.
  • Place a heavy object on top (like a cast iron skillet) for about 30 minutes. This helps remove excess moisture, allowing it to absorb flavors better and achieve that coveted crunch.

Step 2: Prepare the Tofu

  • Once pressed, cut the tofu into 1-inch cubes. This size is perfect for getting crispy edges while maintaining a soft crème center. It also makes it easier to toss with seasonings later.

Step 3: Coat the Tofu

  • In a mixing bowl, combine the cornstarch, tamari or liquid aminos, sea salt, granulated garlic, smoked paprika, black pepper, nutritional yeast, toasted sesame oil, and dried onion flakes. Toss the tofu cubes in this mixture until they are evenly coated.
  • Ensure each piece is well-covered; this will help achieve an even crisp in the air fryer.

Step 4: Air Fry the Tofu

  • Preheat your air fryer to 400°F (about 200°C). Spread the marinated tofu cubes in a single layer in the air fryer basket. It's vital not to overcrowd them; they need space to breathe.
  • Cook for about 15-20 minutes, shaking the basket halfway through to ensure even cooking. You’ll know they’re ready when they’re golden and crispy. If you like them extra crunchy, feel free to add a couple more minutes!

Step 5: Serve and Enjoy

  • Once cooked, remove the tofu and let it sit for a couple of minutes. It’s tempting to dive right in, but giving it a moment lets the outside crisp up even more.
  • I often enjoy my air fryer tofu with some sweet chili sauce drizzled on top or nestled in a fresh salad.

Notes

  •  Cornstarch: This ingredient works wonders in creating a crispy exterior. It forms a light coating that traps moisture inside the tofu while crisping on the outside.
  • Extra-Firm Tofu: This variety is crucial. It’s packed with protein and holds its shape well, ensuring you’ll get that satisfying bite.
  •  Tamari or Liquid Aminos: These add a nice umami flavor without overpowering the dish. Tamari is particularly great for those who are gluten-sensitive.
  • Seasonings: Each seasoning in this recipe is chosen for a reason. Smoked paprika provides a subtle smokiness, while nutritional yeast adds a cheesy flavor profile without dairy.
