Ingredients

  • 1/2 cup of rich and flavorful dark molasses expertly mixed with 1/2 teaspoon of baking soda or 5/8 teaspoon of soda sorghum for a delightful leavening effect
  • 2 cups of finely milled flour chosen for its exceptional quality and consistency
  • 2 tablespoons of hot water freshly boiled to add moisture and aid in the mixing process
  • 1/2 of a beaten egg carefully measured for the perfect balance of richness (reserve the other half for another culinary creation)
  • 1/2 teaspoon of exquisite sea salt harvested from pristine waters to enhance the overall taste
  • 1/2 cup of premium-quality shortening carefully measured for its perfect balance of texture and flavor
  • 1/2 cup of fine granulated sugar ensuring a touch of sweetness to complement the deep molasses flavor

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a bowl, cream together the shortening and sugar until it’s light and fluffy. This should take about 3 minutes at medium speed.
  • Add in the egg, molasses, and hot water and mix until combined.
  • Slowly add the flour and salt into the bowl, a little bit at a time. Mix until everything is fully combined.
  • Using your hands, roll the dough into small balls approximately 1 inch in diameter and place them on an ungreased baking sheet. Then gently flatten each cookie with the palm of your hand.
  • Bake for 10-12 minutes, or until the cookies are lightly golden brown.
  • Remove from the oven and let cool before serving.

Notes

-Make sure to store your cookies in an airtight container or bag.
-If you prefer a softer cookie, bake for less time and if you like them more crispy, bake for a few minutes longer.
-For decorations, you can press sugar crystals into the tops of your cookies before baking.
-To prevent sticking, use parchment paper on your baking sheet.
-Be careful not to overwork the dough or your cookies will be tough! Mix it just until everything is combined.
-Feel free to add in other spices like cinnamon, nutmeg, or ginger for a more complex flavor.
