For assembly:

Instructions

Making the Custard:

  • In a pan, heat the water and sugar until the sugar is dissolved.
  • Whisk together the eggs and egg yolks in a bowl.
  • Slowly add the hot liquid to the egg mixture while whisking continuously.
  • Pour this mixture back into the saucepan and cook over low heat for about 10 minutes or until it thickens.
  • Add the gelatin, vanilla bean, and salt to the custard and whisk until combined.
  • Stir in the banana puree and lemon juice and cook for another 2 minutes or until everything is well incorporated.
  • Remove from heat and let cool completely.

Assembling the Parfait:

  • In a parfait glass or dish, layer the custard and banana slices.
  • Sprinkle some sugar and lemon juice on top.
  • Add a few of the vanilla wafers around the edges of the glass to make a crust.
  • Repeat layering until all ingredients are used up.

Making the Whipped Topping:

  • In a clean bowl, whisk together the heavy cream and yogurt until soft peaks form.

Notes

-For a stronger banana flavor, you can add some fresh banana puree to the custard.
-You can substitute moonshine with another spirit such as rum or whiskey for a different flavor profile.
