Wash and peel the potatoes. Cut them into cubes to make them easier to boil and mash.
Place the cubes in a large pot of boiling water and add 1 tablespoon of salt. Boil for 12 minutes, or until they are fork tender.
Drain the potatoes in a colander and set aside.
In a saucepan, mix together the softened beer cheese and sour cream. Add the milk or cream & melted butter and stir until well combined.
Mash the potatoes with a hand masher until there are no more lumps.
Add the beer cheese mixture to the mashed potatoes and mix until completely combined. Season with salt & pepper, to taste.
Transfer the mashed potatoes to a serving dish and top with chives.
