Ingredients

  • 1/2 cup all-purpose flour/Bread flour
  • 1 tbsp of vegetable oil
  • 1/2 egg
  • 3/2 tsp of baking powder
  • 1/2 tbsp Brown sugar
  • 3/8 cup buttermilk
  • ¼ tsp Salt to taste

Instructions

  • Start off by whisking together a delightful blend of egg, milk, sugar, vegetable oil, baking powder and salt in a medium bowl.
  • To the wet ingredients, add the flour and stir until everything is completely combined. The batter should be somewhat thick in consistency. Refrain from overmixing or else your pancakes will not cook properly.
  • Preheat a large skillet or griddle on medium heat and give it a light spray of non-stick cooking spray. Scoop out around ¼ cup of batter for each pancake onto the hot surface.
  • Let them cook until the edges turn golden brown, usually taking about 1-2 minutes per side. Serve immediately to enjoy these scrumptious pancakes while still warm.

Notes

- You can also add some diced fruit or chocolate chips to the batter for a delicious variation.
- For a healthier alternative, try substituting half of the all-purpose flour with whole wheat flour.
- If not serving immediately, transfer the cooked pancakes onto a plate and keep warm in an oven preheated to 200°F until ready to serve.
