Ingredients

  • 2 finely chopped garlic cloves
  • ½ cup butter
  • 1 chopped onion
  • 4 chicken thighs
  • Salt & pepper – to taste
  • ½ cup buttermilk
  • 1 cup flour
  • 2 tsp baking powder
  • ½ cup heavy cream
  • ¼ teaspoon baking soda

Instructions

  • Prepare the chicken by combining garlic, butter, and onion in a large pot. Simmer over medium heat for about 5 minutes until the onion is softened. Add in the chicken thighs and season with salt & pepper to taste. Cover the pot and simmer for 25-30 minutes or until cooked through.
  • Mix together buttermilk, flour, baking powder, and baking soda in a medium bowl. Roll out the dough onto a lightly floured surface and cut into 1-inch pieces. Drop the dumplings into the pot with chicken and cover for 25 minutes.
  • When the dumplings are cooked through, add heavy cream to the mixture and stir to combine. Simmer for an additional 5 minutes or until the sauce has thickened. Serve while warm and enjoy!

Notes

  • Make sure the chicken is fully cooked before adding in the dumplings.
  • Stir in the heavy cream at the very end, so it doesn’t curdle.
  • Be careful not to overcook the dumplings as they can become dense and rubbery.
