Equipment

  • Large Bowl

Ingredients

  • ½ small red onion finely diced
  • 1 cup of mayonnaise
  • 1 tablespoon of red wine vinegar
  • 1 head of cauliflower divided into small florets
  • 1 cup of Colby Jack cheese cut into small cubes
  • 1/4 cup of finely chopped fresh chives
  • ½ cup of sour cream
  • 2 teaspoons of granulated sugar
  • ½ teaspoon of freshly ground black pepper
  • 1 head of broccoli broken into small florets
  • 1 teaspoon of dried parsley
  • ½ teaspoon of sea salt or to taste
  • 1 tablespoon of Dijon mustard

Instructions

Step 1: Prepare Your Vegetables

  • First, break your broccoli and cauliflower into small, bite-sized florets. Finely dice the red onion.

Step 2: Mix the Dressing

  • In a large bowl, combine mayonnaise, red wine vinegar, sour cream, Dijon mustard, sugar, salt, and black pepper. Stir until the mixture is smooth and well-blended.

Step 3: Combine Ingredients

  • Add the broccoli, cauliflower, red onion, Colby Jack cheese, and chopped chives to the bowl. Toss everything together so that the creamy dressing coats all the ingredients evenly.

Step 4: Chill Before Serving

  • Let the salad sit in the refrigerator for at least an hour before serving. This gives the flavors time to meld beautifully.

Notes

  • Use Fresh Veggies: Fresh broccoli and cauliflower will provide the best crunch.
  • Adjust Sweetness: Feel free to adjust the sugar to your taste preference.
  • Cheese Options: Swap Colby Jack with cheddar or mozzarella if you prefer.
  • Herb Variations: Fresh herbs like parsley or dill can elevate the flavor.
  • Experiment with Nuts: Adding sunflower seeds or walnuts gives an extra crunch.
