Ingredients

Seasoning Mix Ingredients

  • 1/4 teaspoon sprigs of fresh thyme
  • 1/2 teaspoon garlic powder
  • Pepper and salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Tony Chachere’s creole seasoning
  • 1.5 tablespoons diced chipotle peppers
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon Onion powder to taste

Garnishing taco Ingredients

  • 1/4 cup diced tomatoes
  • 1.5 tablespoons fresh parsley
  • 1/6 cup yellow Onion

Instructions

  • Combine all the dry seasoning ingredients & season the chicken pieces with them.
  • Heat the olive oil in a skillet & add the chicken pieces. Cook for about 10 minutes or until it is cooked through & Shred-it.
  • Warm up the tortillas over medium heat for 1-2 minutes on each side. This helps to make them pliable and easier to fold.
  • To assemble the tacos, place some of the chicken in a warm tortilla and top with cheese.
  • Fold the tacos over and cook for about 3-4 minutes on each side or until golden brown. Garnish with tomatoes, onions, and parsley. Serve hot!

Notes

-If you don’t have the seasoning mix ingredients, you can use a taco seasoning packet instead.
-To make tacos even more flavorful, try adding some hot sauce or diced jalapeno peppers.
-To reduce fat and calories, try subbing out the mozzarella cheese for a lower-fat cheese such as cheddar or Monterey Jack.
-For a spicier version, add some diced jalapenos or hot sauce to the tacos.
-Garnish the tacos with cilantro for an extra flavorful kick.
-If you don’t have the time to make your own seasoning mix, feel free to use a store-bought taco seasoning packet instead.
-For an extra protein boost, add some black beans or chickpeas to the tacos.
-The tacos can also be made with soft corn or flour tortillas.
-You can also add other vegetables such as bell peppers, spinach, and mushrooms for a more nutrient-dense dish.
-If you’re looking to cut down on calories, try using low-fat cheese instead of the mozzarella cheese.
-Toppings such as avocado, salsa, sour cream, and Greek yogurt can also b added to the tacos for an extra flavor boost.
