Start with slicing and dicing your vegetables, chicken, and sausage. Once you complete the prep work, place everything in the fridge to keep it fresh until ready for use.
It’s time to make the roux. Put the oil in a pot and heat it over medium-high. Once the oil is hot, add flour while whisking continuously until you get a chocolate brown color. It may take up to an hour, depending on the stove.
Now, add all the vegetables and mix them well with the roux. Cook this for 10 minutes.
In another pan, cook sausage until it’s slightly browned. Then add chicken stock to deglaze the pan and loosen the flavorful bits stuck to the bottom.
Once the roux and vegetables are ready, toss the sausage, and all the stock for a delicious combination. Then, add cajun seasoning, garlic powder, salt, and bay leaves. Simmer this mixture for 15-20 minutes.
Pour two cups of water into the pot and heat it to a boil. Skim off any oil on top.
Add the chicken and simmer for one and a half hours to create a savory dish.
Serve Cajun Gumbo hot with white rice!
