Equipment

  • 1 pot

Ingredients

  • 1/2 cup All-Purpose Flour
  • 1/2 Green Bell Pepper
  • 2 Sticks of Celery
  • 1 lb Smoked Sausage
  • 1/2 Tablespoon of Cajun Seasoning
  • 1 Bay Leaves
  • 1/2 Teaspoon Salt
  • 1/2 cup Vegetable Oil
  • 1 yellow Onion
  • 1 whole Rotisserie Chicken deboned
  • 1 Chicken Stock(unsalted)
  • 2 Cups of Water
  • 1/2 Teaspoon Garlic Powder
  • 5 oz Seasoning Blend(frozen)

Instructions

  • Start with slicing and dicing your vegetables, chicken, and sausage. Once you complete the prep work, place everything in the fridge to keep it fresh until ready for use.
  • It’s time to make the roux. Put the oil in a pot and heat it over medium-high. Once the oil is hot, add flour while whisking continuously until you get a chocolate brown color. It may take up to an hour, depending on the stove.
  • Now, add all the vegetables and mix them well with the roux. Cook this for 10 minutes.
  • In another pan, cook sausage until it’s slightly browned. Then add chicken stock to deglaze the pan and loosen the flavorful bits stuck to the bottom.
  • Once the roux and vegetables are ready, toss the sausage, and all the stock for a delicious combination. Then, add cajun seasoning, garlic powder, salt, and bay leaves. Simmer this mixture for 15-20 minutes.
  • Pour two cups of water into the pot and heat it to a boil. Skim off any oil on top.
  • Add the chicken and simmer for one and a half hours to create a savory dish.
  • Serve Cajun Gumbo hot with white rice!

Notes

– Be sure to use a good quality smoked sausage for best results.
– Add some tomato paste or diced tomatoes for an even deeper flavor.
– You can adjust the level of spiciness with more Cajun seasoning if desired.
– When skimming off the oil from the top, make sure to do it slowly and carefully as it contains hot liquid and steam.
– Make sure to cook the gumbo until all ingredients are cooked properly.
