Ingredients

  • 1/2 cup chopped rosemary
  • Ground black pepper
  • Kosher salt
  • 3 1/2 pound chickens
  • 1/2 cup olive oil
  • 1 cup arugula
  • Lemon, sliced
  • 1 tbsp lemons Juice

Instructions

  • Mix together rosemary, pepper, salt, and olive oil.
  • Coat chicken with marinade. Refrigerate for 1 hour (up to overnight).
  • Grill chicken on medium-high heat until golden brown and cooked through.
  • Serve with arugula, lemon slices, and lemon juice.

Notes

  • Make sure to leave enough time for the chicken to marinate; the longer you let it sit, the more flavorful it will be!
  • If you want even more flavor, add some garlic or other herbs like oregano or thyme to the marinade.
  • Be sure to preheat your grill before cooking; this will ensure that the chicken cooks evenly and doesn't burn.
  • If you don't have a grill, you can also bake or pan-fry this dish in an oven or stovetop.
  • To add even more flavor, baste the chicken with some of the marinade while it cooks.
  • This dish is great served with roasted potatoes or a salad of your choice. It also pairs well with a glass of white wine!
