Ingredients

  • 16 ounces quartered cremini mushrooms
  • 2 lb chicken breasts boneless & skinless
  • 2 cups heavy cream or half and half
  • 2 Ib bow-tie pasta farfalle
  • 1 cup frozen peas
  • 2 teaspoon freshly ground black pepper
  • chopped fresh basil leaves
  • 24 ounces cut into strips bacon
  • 2 cups Freshly Grated Parmesan Cheese
  • 1 chopped yellow onion
  • 1 cup white vinegar
  • 1 teaspoon kosher salt
  • 2 cups sun-dried tomatoes chopped
  • 1/4 cup extra virgin olive oil
  • 2 head of cloves removed garlic roasted

Instructions

  • Cook the pasta & strain it following the package direction.
  • In a large skillet over medium-high heat, add the olive oil. Once it is hot, add the chicken and season with salt and pepper. Cook until golden brown on both sides, about 4 minutes per side.
  • Remove the chicken from the pan, then add in the bacon strips and cook until almost crisp, about 3 minutes. Next, add the mushrooms and onions. Cook until the vegetables are soft and lightly browned, about 5 minutes.
  • Next, add the sundried tomatoes to the pan and cook for 1 minute. Pour in the vinegar or white wine and cook until it has reduced by half. Then add in the cream or half and half and reduce heat to low.
  • Add the cooked pasta, chicken, peas, and roasted garlic cloves to the pan. Stir to combine, then add half of the Parmesan cheese and stir again. Simmer for 2-3 minutes until everything is hot, then taste and adjust seasoning with salt and pepper if necessary.
  • Remove from heat and stir in the remaining Parmesan cheese. Divide among four plates and top with fresh basil leaves for garnish. Serve immediately.

Notes

- If you want to add more heat to the dish, feel free to add some crushed red pepper flakes.
- For a vegetarian version of this dish, omit the chicken and bacon.
- Reserve some Parmesan cheese for topping the finished dish for an extra cheesy flavor.
- Make sure not to overcook the farfalle; it should be al dente when finished.
- Make sure to use fresh roasted garlic for the best flavor.
