Start by gathering all of the ingredients. In a medium-sized bowl, mix together the brown sugar and granulated sugar until they are evenly combined. Add in the Himalayan salt and organic vanilla extract.
In a separate large bowl, whisk together the condensed milk, heavy cream, and ice cream salt until they are well blended.
Add the sugar mixture to the milk mixture and stir until everything is combined. If you would like, add in the coconut milk for a hint of coconut flavor.
Pour the mixture into an ice cream maker and follow the instructions according to the manufacturer. Once the ice cream is ready, add in the chocolate chips and stir until they are evenly distributed.
Transfer the ice cream to an airtight container and place it in the freezer for at least 4 hours before serving.
