Instructions
Start by preparing the pork skin. Cut it into small pieces and set aside.
To make the Duros pellets, heat a pan over medium-high heat and add enough oil to cover the bottom of the pan. Add the Duros pellets and fry until golden brown and crispy on both sides. Transfer them to a paper towel-lined plate to drain.
In a large bowl, combine the cabbage, tomatoes, avocado, and pork skin. Pour in enough hot sauce to lightly coat the vegetables and mix everything together.
To assemble the chilindrinas, spread out four Duros pellets on a plate or tray. Top each one with some of the vegetable mixture and drizzle with Mexican crema.
Serve the chilindrinas.
Notes
