Ingredients

  • 1 can chipotle peppers in adobo sauce
  • Water to thin

Instructions

  • Start by opening a can of chipotle peppers in adobo sauce. Carefully remove the peppers and discard the sauce.
  • Place the desired number of peppers in a food processor or blender, then add just enough water to thin out the puree. You may need to stop and scrape down the sides of your machine if you’re blending more than a few peppers at once.
  • Blend the mixture until it’s smooth and creamy, then transfer to an airtight container or jar and store in the refrigerator for up to two weeks. It will keep in the freezer for up to one year.

Notes

  • If you want a spicier puree, add more peppers to the food processor.
  • If you want a milder puree, use fewer peppers and add more water to thin it out.
  • Don’t forget to scrape down the sides of your food processor or blender while blending the ingredients! This will ensure an even texture.
  • If you’re not a fan of spicy foods, start with fewer peppers and add more to taste.
  • The puree can be used as soon as it’s made but will continue to thicken over time. If it becomes too thick, just add some water to thin it out.
