Ingredients

  • 1 can can of red kidney beans, rinsed and drained
  • 2 cloves Minced Garlic
  • 2 tsp plain chili powder
  • 1/2 can tomato sauce
  • 1 large onion (finely chopped)
  • 1/4 tsp cayenne pepper
  • 1/4 tbsp cumin powder
  • 1 can diced tomatoes
  • 1 pound lean ground beef
  • 1/2 red bell pepper, thinly sliced
  • 1/4 tsp freshly ground black pepper
  • 1 green bell pepper, diced
  • Salt to taste

Instructions

  • This begins by prepping the vegetables. Cut the onions, red bell peppers, and green bell peppers into small pieces.
  • In a large pot, cook the ground beef over medium heat until it is browned. Once cooked, drain off any excess fat and set aside.
  • Now add in all of your spices – chili powder, cumin, garlic, cayenne pepper, and black pepper – and stir everything together.
  • Now add in the cooked beef along with the diced tomatoes, tomato sauce, kidney beans, and chopped vegetables. Stir to combine.
  • Reduce the heat to low and let the chili simmer for 20 minutes, stirring occasionally. Taste it and adjust the seasoning as needed with salt.
  • Serve the chili in bowls, topped with your favorite toppings such as cheese, sour cream, and cilantro.

Notes

  • To make it spicier, add more cayenne pepper or a pinch of red pepper flakes.
  • To make it milder, reduce the amount of chili powder or omit the cayenne pepper.
  • For a thicker chili, simmer for an additional 10 minutes with the lid off.
  • To make it heartier, add some cooked rice or corn to the chili.
