Ingredients

  • 2 cups cherry or grape tomatoes halved
  • 1 English cucumber diced
  • 16 oz rotini penne, or fusilli pasta
  • 1/3 cup fresh parsley or dill chopped
  • 1 medium red onion thinly sliced
  • 1 green and 1 red bell pepper chopped
  • 1 cup Kalamata olives pitted and halved
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 1/2 tsp dried oregano
  • 1 1/2 cups crumbled feta cheese
  • Salt and freshly ground black pepper to taste
  • 3 cloves garlic minced
  • 1 large lemon juiced

Instructions

  • Gather and prep the ingredients. Wash and halve the tomatoes, dice the cucumber, thinly slice the red onion, chop bell peppers into small cubes, pit and halve Kalamata olives, chop parsley or dill, and mince garlic cloves. Whisk together red wine vinegar, extra virgin olive oil, dried oregano, garlic, and lemon juice in a small bowl to make the dressing.
  • Cook the pasta. Bring a large pot of salted water to boil over high heat and add the pasta. Cook according to package directions, drain, and rinse under cold water until it is cool enough to handle.
  • Assemble the salad. Place cooked pasta into a large bowl. Add tomatoes, cucumber, onion, bell peppers, olives, and parsley or dill into the bowl. Pour in dressing and toss to combine. Sprinkle feta cheese over the top and season with salt and pepper to taste. Serve immediately or refrigerate until ready to serve.

Notes

  • Feel free to customize this salad with your favorite ingredients. You can add in shrimp, artichoke hearts, capers, or even roasted red peppers for an extra punch of flavor.
  • This salad is best served immediately after assembling to ensure that all the flavors come together.
