Ingredients

  • 1 avocado
  • 1 tablespoon jalapeño diced
  • 4 pieces of toast
  • 2 teaspoons Worcestershire
  • 2 teaspoons lime juice
  • ½ teaspoon garlic salt
  • 2 ears of corn
  • 1/4 teaspoon chipotle chili powder
  • 1 teaspoon creamy mayonnaise
  • 1 tablespoon unsalted butter
  • 2 tablespoons Greek yogurt
  • ¼ teaspoon agave
  • Salt to taste

For Topping:

  • 1 tablespoon goat cheese shredded
  • 1 tablespoon cilantro chopped
  • Chili powder

Instructions

Step 1: Getting The Avocado Mix Ready

  • Alright, let’s kick things off by prepping that creamy avocado mix. Grab a small bowl and toss in the diced avocado, Worcestershire sauce, garlic salt, and lime juice. Give it all a good mix until it’s nicely combined but still has a bit of texture to it.

Step 2: Whip Up The Yogurt Sauce

  • Now, in another bowl, let’s whip together our tangy yogurt sauce. Combine the creamy mayo, Greek yogurt, chipotle chili powder, lime juice, agave, and a sprinkle of salt and pepper. Stir it all up until it’s smooth and creamy.

Step 3: Sizzle Up The Corn

  • Heat up a skillet with about a tablespoon of unsalted butter. Once it’s nice and hot, toss in the corn kernels and let them sizzle away for about 5 to 6 minutes. We want them to get a little charred and golden brown. Once they’re done, take them off the heat and let them cool down a bit.

Step 4: Mix In Some Heat

  • Now, let’s kick up the heat a notch by adding in the diced jalapeños to the bowl with the corn. Give it a good mix, then add a couple of dollops of that creamy Greek yogurt sauce we made earlier. Stir it all up until the corn and jalapeños are nicely coated in that spicy, tangy sauce.

  • While our corn mix is cooling down, let’s get our toast ready. Pop those slices of bread into the toaster until they’re nice and golden brown.

Step 6: Spread On The Goodness

  • Once the toast is ready, slather on a generous layer of that creamy avocado spread we made earlier. Spread it on nice and thick, covering the entire surface of each slice of toast.

Step 7: Top It Off

  • Now for the fun part – topping our avocado toast! Spoon on that delicious corn and jalapeño mixture onto each slice of toast. Sprinkle on some shredded goat cheese and chopped cilantro for an extra burst of flavor. If you’re feeling extra adventurous, a dash of chili powder on top adds a nice kick!
