Instructions

  • Dice the eggplant, zucchini, bell pepper, tomato, and onion. Mince the garlic clove.
  • Heat the olive oil in a pot over medium heat. Once hot add the diced vegetables and minced garlic to the pot. Stir everything together until it is all evenly mixed.
  • Season with salt and black pepper. Cook for about 5 minutes, stirring occasionally.
  • Add the tomato sauce and stir to combine. Simmer over low heat for 10-15 minutes or until vegetables are tender but still have some bite.
