Instructions
Dice the eggplant, zucchini, bell pepper, tomato, and onion. Mince the garlic clove.
Heat the olive oil in a pot over medium heat. Once hot add the diced vegetables and minced garlic to the pot. Stir everything together until it is all evenly mixed.
Season with salt and black pepper. Cook for about 5 minutes, stirring occasionally.
Add the tomato sauce and stir to combine. Simmer over low heat for 10-15 minutes or until vegetables are tender but still have some bite.
Serve warm.
