Ingredients

  • 3/4 teaspoon of salt seasoning the dish and bringing out the flavors of the other ingredients.
  • 1 tablespoon of extra virgin olive oil providing a smooth and fruity essence that enhances the overall taste.
  • 1/2 stalk of celery finely diced, lending a refreshing and slightly crunchy texture to the dish.
  • 1/2 finely chopped garlic cloves , infusing the dish with a pungent and aromatic note.
  • 1/2 cup of chopped flat-leaf parsley adding a fresh and herbaceous taste that brightens the dish.
  • 1/4 teaspoon of black pepper adding a subtle hint of heat and depth to the dish.
  • 1/2 teaspoon of ground cumin offering a warm and earthy flavor that complements the lamb and spices.
  • 1/2 cup of long grain rice providing a fluffy and delicate texture to the dish.
  • Juice of 1/4 lemon offering a tangy and citrusy note that balances the richness of the lamb and adds brightness to the dish.
  • 1/4 cup uncooked orzo introducing small pasta shapes that add a pleasing chewiness to the overall dish.
  • 1 1/4 cups of water serving as the liquid to cook the rice and orzo, allowing them to absorb flavors and become tender.
  • 1/2 diced onion , releasing its sweet and aromatic flavors when cooked, adding depth to the dish.
  • 1 tablespoon of chopped fresh mint leaves imparting a cool and refreshing flavor that pairs well with the lamb and other ingredients.

Instructions

  • Heat a large skillet over medium heat and add olive oil. Allow it to heat until shimmering.
  • Add chopped onion, garlic, and celery. Sauté for approximately 5 minutes until they become soft and translucent, creating a flavorful base.
  • Introduce ground lamb to the skillet. Cook for 4-5 minutes until it’s no longer pink, stirring occasionally for even cooking. The lamb adds richness to the dish.
  • Add ground cumin, fresh mint leaves, chopped parsley, and a pinch of black pepper. Cook for an additional minute to infuse the mixture with flavors.
  • Incorporate long-grain rice and orzo into the skillet. Stir vigorously to create a balanced mixture with lamb and spices.
  • Pour in 2 cups of water and bring the mixture to a boil over higher heat. Once boiling, reduce heat, cover the skillet, and simmer for about 20 minutes until the rice is cooked through.
  • Season the dish to taste with salt and add lemon juice for a zesty flavor. Stir well to distribute the seasoning evenly. Let it simmer for a few more minutes to meld the flavors.
  • Serve the flavorful lamb and rice dish while it’s still warm. Optionally, garnish with freshly chopped parsley for a burst of color and added freshness.

Notes

  • If you don’t have orzo, you can substitute it with quinoa, couscous, bulgur wheat, or even cooked potatoes.
  • You can also add other vegetables such as bell peppers and carrots to the dish if desired.
