Ingredients

  • 1 free-range egg yolk carefully separated
  • 1 cup stone-ground all-purpose flour
  • Powdered sugar for a delicate dusting finish
  • 1/4 cup finely crushed organic walnuts or almonds optional
  • 1/2 cup organic powdered sugar finely sifted
  • 1/2 teaspoon pure Madagascar vanilla extract
  • 125 g artisanal unsalted butter gently softened

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  • Ensure the butter is gently softened at room temperature. Finely sift the organic powdered sugar to remove any lumps. Carefully separate the egg yolk.
  • In a mixing bowl, cream together the softened unsalted butter and finely sifted organic powdered sugar until light and fluffy.
  • Add the carefully separated egg yolk and pure Madagascar vanilla extract to the creamed butter-sugar mixture. Beat well until fully combined.
  • Gradually add the stone-ground all-purpose flour to the mixture. If using, incorporate the finely crushed organic walnuts or almonds as well. Mix until a smooth dough forms.
  • Take portions of the dough and shape them into small balls or any desired shape. You can roll them into rounds or flatten them slightly with a fork for a textured pattern on top.
  • Place the shaped dough on the prepared baking sheet, leaving some space between each cookie.
  • Put the baking sheet into the preheated oven. Bake the Gurabia cookies for approximately 12-15 minutes, or until they turn lightly golden around the edges.
  • Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. Transfer the cooled Gurabia cookies to a wire rack. Before serving, delicately dust them with powdered sugar for a decorative finish.
  • Your homemade Gurabia cookies are ready. Serve them as a delightful treat with tea or coffee.

Notes

  • Be sure to roll out the dough as evenly as possible. This will ensure that all the pieces of pastry are the same size and cook evenly.
  • Make sure the oil is hot before adding the pieces of dough. If the oil is not hot enough, the pastry will not cook properly.
  • Allow the pieces of pastry to cool before dipping them in the syrup. This will help prevent the syrup from burning or sticking to the pastry.
  • When deep-frying the pastry, be sure to keep an eye on it. The pieces of dough cook quickly and can burn easily.
  • Feel free to experiment with the syrup or honey. You can add spices and other ingredients to the syrup to give the pastry a unique flavor.
