Ingredients

  • 2 cups Rotisserie chicken

  • 1 Jar Jalapenos
  • 20 Slices Velveeta cheese
  • 1 cup Yellow onion
  • 4 cups Tortilla chips
  • 2.5 cup Chicken broth

Instructions

  • Preheat your oven to 350°F before starting.
  • Place the shredded chicken and Velveeta slices into a large mixing bowl.
  • Thinly slice the jalapenos and incorporate them with the other ingredients in the bowl.
  • Take out a 9 x 13 inch baking dish, spread half of the tortilla chips onto its base.
  • Top the tortilla chips with the chicken and cheese mixture.
  • Chop the yellow onion into tiny pieces and spread it over the top of this layer.
  • Cover the ingredients below with the remaining tortilla chips.
  • Pour in a sufficient amount of chicken broth so that all elements are immersed equally.
  • Place in oven and bake for 25 minutes until it obtains a golden hue.
  • Let cool for 10 minutes before serving.

Notes

  • If you want a more cheesy flavor, add more Velveeta cheese slices.
  • If you want a more spicy flavor, add more jalapenos or diced chilies.
  • To prevent the tortilla chips from getting soggy, leave them on top until after baking.
