Pairing homemade cream of chicken soup with crusty bread, like baguettes or sourdough, makes every spoonful indulgent as you dip the bread into the creamy soup
Start by gathering all your ingredients. Having everything at hand makes cooking smoother, and you'll avoid the last-minute dash to the pantry.
Step 2: Prepare Your Broth
In a medium saucepan, dissolve 1 chicken bouillon cube or 1 teaspoon of Better Than Bouillon in 2 cups of water (for a richer flavor, use chicken stock instead). Bring this to a gentle simmer over medium heat.
Step 3: Make the Roux
In another pot, melt 4 tablespoons of unsalted butter over medium heat. Once melted, add ½ cup plus 2 tablespoons of all-purpose flour.
Stir continuously for about 2-3 minutes, creating a roux that gives the soup its creamy texture. You want it golden, not brown, so keep an eye on it.
Step 4: Add Milk Gradually
Slowly pour in 1 cup of whole milk while whisking to avoid lumps. Continue whisking until the mixture thickens, which will take about 3-5 minutes.
Step 5: Combine & Season
Once thick, gradually add the chicken stock you prepared in step 2.
Stir calmly as it blends. Now it’s time to season: add 1/3 teaspoon of fine sea salt, 1/3 teaspoon freshly ground black pepper, 1/3 teaspoon ground celery seed, 1/3 teaspoon garlic powder, 1/3 teaspoon dried minced onion, and 1/4 teaspoon smoked paprika.
Feel free to adjust according to your palate.
Step 6: Simmer
Lower the heat. Let the soup simmer for 10 minutes, allowing the flavors to meld beautifully. Stir occasionally to prevent sticking.
Step 7: Taste and Adjust
Give it a taste! This is your chance to add more seasonings or even some cooked chicken if you're feeling fancy.
Step 8: Serve
Once the soup is thick and creamy, it’s ready to serve! Ladle it into bowls and pair it with your favorite sides.
Notes
Use Fresh Herbs: Fresh thyme or parsley added just before serving can elevate the flavor.
Add Vegetables: Carrots, celery, or peas can easily be incorporated. Add them during the simmering phase.
Adjust the Creaminess: If you prefer a thicker soup, use less stock; if you like it more soupy, add an extra splash.
Experiment with Spices: Add your favorite spices or try a pinch of cayenne for a kick.
Cooked Chicken for Texture: If you have leftover chicken, chop and add it during the simmer for added texture.
