Instructions

Step 1: Prepare the Kiwis

  • Trim off both ends of the kiwis and peel away the skin. This might be the most challenging part, but I assure you, it’s worth it! Once peeled, slice each kiwi into rounds about one inch thick. You want them thick enough to hold their shape when dipped but not so thick they lose that juicy bite.

Step 2: Dry the Kiwi Slices

  • Place the kiwi slices on a few layers of kitchen tissue. Gently pat them dry. This step helps the chocolate adhere better and prevents any unwanted water from making your chocolate seize up later.

Step 3: Melt the Chocolate

  • In a microwave-safe bowl or using a double boiler, combine your chocolate and coconut oil. If using the microwave, melt it in 30-second intervals, stirring in between until you have a smooth mixture. When using a double boiler, set the bowl over simmering water. Stir constantly until fully melted. If you're feeling adventurous, add in that teaspoon of vanilla extract while melting for a rich flavor infusion.

Step 4: Dip the Kiwi Slices

  • After the chocolate has melted and slightly cooled, it’s time to dip! Using a wooden skewer or fork, dip each kiwi slice into the luscious chocolate. Be sure to coat them evenly, giving each piece a nice chocolate hug.

Step 5: Set the Kiwi Chocolate

  • Let the excess chocolate drip off each slice and place them on a parchment-lined plate. If you’re using pistachios, sprinkle them on top of each slice while the chocolate is still warm, letting them stick.

Step 6: Chill to Harden

  • Place the plate in the refrigerator for around 30 minutes to allow the chocolate to harden. If you're in a hurry, the freezer works as a quick alternative—just keep an eye on them!
