Instructions

Step 1: Preheat the Oven

  • Before anything else, preheat your oven to 400°F (200°C). A hot oven is crucial for the perfect bake.

Step 2: Prepare Flour Mixture

  • Grab a large mixing bowl, and whisk together your all-purpose flour, cake flour, cornstarch, baking soda, baking powder, salt, and the ground cinnamon. This step ensures that all the dry ingredients are well combined and aerated, which is key for that perfect texture.

Step 3: Cream the Butter

  • In a stand mixer bowl, place your cold, cubed butter. Secure the paddle attachment and set your mixer to a medium-low speed. You want to cream the butter for about 30 seconds until it's slightly softened but still cold.

Step 4: Add Sugars

  • Next, add the packed brown sugar into the mixer bowl. Mix for another 30 seconds until it starts to combine, and then add in the white granulated sugar. Continue to mix for another 30 seconds. Your mixture should become light and fluffy, bringing in all the air necessary for wonderful cookies.

Step 5: Incorporate Eggs and Vanilla

  • Now, add in your large egg, egg yolk, and if you're using it, the vanilla extract. Mix until everything is well combined. Use a rubber spatula to scrape any butter that sticks to the paddle attachment back into the bowl.

Step 6: Combine Wet and Dry Mixtures

  • With your mixer on low speed, slowly add the flour mixture to the wet ingredients. Do this gradually until everything is incorporated. Don’t worry about over-mixing; just ensure there are no dry spots left.

Step 7: Fold in the Chocolate Chips

  • Remove the mixing bowl from the stand and gently fold in your milk chocolate chips (or semi-sweet) by hand using a spatula until evenly distributed. Stop mixing as soon as they are combined; you want to avoid melting the chips.

Step 8: Shape Your Cookies

  • Using a cookie scoop or a food scale, portion out the dough into roughly 6-ounce cookie balls—yes, they're meant to be a bit large! Place the rounded dough onto your cookie sheet lined with parchment paper or a silicone mat. Keep them tall; resist the urge to flatten them.

Step 9: Bake

  • Pop them into the preheated oven and bake for about 10-12 minutes, or until the tops are beautifully golden brown. Pull them out just shy of what you might consider fully done as they will continue to firm up as they cool.

Step 10: Cool Down

  • Let the cookies cool on the baking sheet for 15-30 minutes. This is tough, I know! But giving them some time to set will make all the difference in taste and texture. Once they’ve cooled for a bit, transfer them to a cooling rack to finish.
