  • 1/2 lb boneless chicken thighs
  • 2 cloves garlic, minced or finely grated
  • 1/8 cup light soy sauce
  • 1/2 tablespoon freshly ground black pepper
  • 1/2 tablespoon granulated sugar
  • 1/4 medium onion, diced
  • 1.5 tablespoons oil or margarine
  • 1/4 cup Distilled White Vinegar

Instructions

  • Heat oil in a large pan over medium-high heat, then add chicken pieces and cook until golden brown on both sides (about 5 minutes).
  • Add garlic, onion, white vinegar, soy sauce, and black pepper to the pan and mix everything together. Cook for another 3-4 minutes until the vegetables are softened.
  • Add sugar to the mixture and stir until it is incorporated. Reduce heat to low and simmer for 15-20 minutes or until the chicken is cooked through and the sauce has reduced.
  • Serve warm with steamed rice or other grains.

Notes

  • Use good quality, fresh chicken for best results.
  • If you don't have white vinegar, apple cider vinegar can be substituted.
  • To make the dish spicy, add some chili powder or ground cayenne pepper.
  • For a sweeter flavor, use brown sugar instead of white sugar.
  • If you like your adobo sauce thicker, simmer for longer to reduce it further.
  • Make sure to cook the chicken through before serving. It should be cooked at an internal temperature of 165F.
