Moe’s Chili Con Queso Recipe

Moes Chili Con Queso Recipe is a spicy, cheesy dip that is perfect for any occasion. It’s made with Pepper Jack cheese, Velveeta Queso Blanco Cheese, ground beef, Rotel, onions, jalapenos, and garlic. Combining all these flavors makes a delicious dip that your guests will love! This recipe can easily be doubled or tripled to feed a large crowd.

Ingredients

  • 500 g cooked and chopped ground beef
  • 16 oz  Pepper Jack Cheese
  • 32 oz Velveeta Queso Blanco Cheese
  • 3/4 tablespoon minced garlic
  • 1 cup pickled jalapenos in a jar
  • 1 small diced onion
  • 20 oz Rotel

Instructions

  • Preheat the oven to a sizzling 350 degrees Fahrenheit.
  • Blend together Pepper Jack and Velveeta Queso Blanco Cheeses in a large bowl until they are thoroughly combined.
  • Evenly distribute the cheese mixture across the bottom of a 9×13 inch baking dish.
  • Spread cooked ground beef over the melted cheese layer in an even fashion.
  • Pour Rotel over the ground beef, and top with diced onion, pickled jalapenos and minced garlic.
  • Place into a preheated oven and bake for 30 minutes or until bubbly and golden brown on top with edges crisped to perfection.
  • Allow the dish time to rest before serving for at least 5 minutes.

Notes

  • If you want to make this recipe spicier, add a few more jalapenos or some cayenne pepper to the mix.
  • You can also use ground turkey instead of beef if desired.
  • For extra cheesy goodness, sprinkle shredded cheese over the top before baking!
  • If making ahead of time, you can prepare up to a day in advance and store covered in fridge until ready to bake.
