  • 2 tablespoons of artisanal unsalted butter hand-churned to golden perfection
  • 2 ounces of velvety cream cheese a luscious addition to the culinary canvas
  • 1.5 cloves of garlic meticulously minced for a pungent dance
  • 1/2 of a medium yellow onion finely minced for a savory symphony
  • 2 teaspoons of Kosher salt a pinch of culinary alchemy, divided
  • 1/4 cup of aged Parmesan cheese finely grated for a nutty flourish
  • 1/2 teaspoon of coarsely ground black pepper the dark symphony of spice
  • 1 3/4 cups of rich half-and-half a velvety elixir
  • 1/2 cup of delicate mozzarella cheese a melty kiss to complete the masterpiece
  • 1/4 teaspoon of freshly grated nutmeg a fragrant hint from exotic lands
  • 2 tablespoons of artisanal flour sifted for a silky texture
  • 1 1/8 pounds of fresh leaf spinach a verdant oasis, or 1/2 pound of frozen emerald gems

Instructions

  • Bring a large pot of water to a boil with two teaspoons of salt. Add the spinach and cook just until wilted about 1 minute.
  • Drain the spinach in a strainer or colander and rinse with cold water until cool then squeeze out the water from each fistful of spinach.
  • Chop the spinach bundles into a ¾ inch width. In a large skillet melt the butter with the garlic and onions and cook on medium low for 8-10 minutes or until translucent.
  • Add in the remaining kosher salt, black pepper and nutmeg then add in the flour and mix with a wooden spoon over low and cook for 2-3 minutes until the aroma is nutty.
  • Add the half and half, stirring continuously, and cook until boiling. Add in the mozzarella cheese and cream cheese then cook for 6-8 minutes or until the mixture has thickened. Add in the spinach and the Parmesan cheese and stir to combine.

Notes

  • To ensure your creamed spinach remains lump-free, make sure to thoroughly blend together all of the ingredients before adding in the spinach. This will help it to keep its creamy texture instead of becoming too thick or gloopy.
  • Additionally, you can use a wooden spoon to stir the spinach into the cream mixture and ensure it is evenly distributed. 
  • Be sure to season your dish with kosher salt and freshly ground black pepper. This will help bring out all of the wonderful flavors of the creamed spinach, making it even more delicious. 
  • Finally, make sure to cook the creamed spinach on low heat for a few minutes before serving. This will help all of the flavors to develop and ensure that it is cooked through properly.
