Ingredients

  • 2 4- inch pieces of ginger adding a pungent and aromatic flavor to the dish, enhancing the overall taste profile and providing a delightful warmth.
  • 12 cups of Happy Belly Chicken Broth a high-quality broth made from chicken bones and infused with savory flavors, creating a rich and flavorful base for the dish, providing a comforting and nourishing element.
  • 6 ounces of Three Ladies Vermicelli Noodles a delicate and thin rice noodle variety, adding a light and chewy texture to the dish, absorbing the flavors of the broth.
  • 2 pounds of chicken legs or thighs providing a juicy and tender meat component to the dish, with rich and flavorful dark meat that adds depth to the broth.
  • 8 stalks of green onions adding a fresh and mild onion flavor to the dish, providing a vibrant green color and a pleasant crunch.

Instructions

  • In a bowl, soak the vermicelli noodles in water for 15 minutes. Once done, set aside.
  • Season chicken legs or thighs with salt and cook on both sides in a saucepan until slightly browned (60 seconds each side).
  • Add sliced ginger to the pan and pour chicken broth over it. Simmer for 15 minutes.
  • Remove the chicken legs or thighs from the pan once cooked and let cool before shredding them into ¼-inch pieces.
  • Increase the heat of the broth to a boil, add drained vermicelli noodles, and cook for 1 minute. Put back in the shredded chicken thighs and chopped green onions, simmering for 3-5 minutes until done.

Notes

  • You can also add other vegetables like carrots or mushrooms to the Okazuya long rice.
  • If you want a more flavorful and spicy dish, add some chili oil or red pepper flakes to the mix.
  • For extra flavor, you can sprinkle some sesame seeds on top of the dish before serving.
  • If you want the dish to be less spicy, use a milder chicken broth.
  • You can also serve Okazuya long rice with steamed white or brown rice. This will make the dish more filling and nutritious.
