Instructions
In a bowl, soak the vermicelli noodles in water for 15 minutes. Once done, set aside.
Season chicken legs or thighs with salt and cook on both sides in a saucepan until slightly browned (60 seconds each side).
Add sliced ginger to the pan and pour chicken broth over it. Simmer for 15 minutes.
Remove the chicken legs or thighs from the pan once cooked and let cool before shredding them into ¼-inch pieces.
Increase the heat of the broth to a boil, add drained vermicelli noodles, and cook for 1 minute. Put back in the shredded chicken thighs and chopped green onions, simmering for 3-5 minutes until done.
Notes
You can also add other vegetables like carrots or mushrooms to the Okazuya long rice.
