  • 1 Oxtail
  • 2 tbs Goya Salad Olives
  • 2 oz Goya tomato sauce

  • 2 limes
  • 1 tbsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp soy sauce
  • 1/4 tsp Dominican ground oregano
  • 1/4 cup red wine
  • 1/4 cup onions
  • 1/2 cup green and red peppers

Instructions

  • In a deep and wide-bottomed pan, add the oxtail slices and season them with salt, pepper, oregano, lime juice, and olive oil. Let it marinate for 30 minutes.
  • Heat some extra virgin olive oil in the pan. Add the onions and peppers and sauté for 5 minutes until soft. Add the tomato sauce and cook for an additional 5 minutes.
  • Add the marinated oxtail slices to the pan and cook for 7-10 minutes or until it is tender. Add the red wine and soy sauce and let it simmer on low heat for 10-15 minutes. The liquid should reduce by half.
    Serve the oxtail stew with boiled yucca, white rice, or any other side of your choice.

Notes

  • Be sure to marinate the oxtail in salt, pepper, oregano, lime juice, and olive oil for at least 30 minutes before cooking. This will help to tenderize it and bring out its flavor.
  • When sautéing the onions and peppers in olive oil, be sure to cook them until they are soft and beginning to caramelize. This will bring out their sweetness and add depth of flavor to the dish.
  • When adding the red wine, be sure to scrape up all of the browned bits from the bottom of the pan. This will give your dish more complexity and depth of flavor.
