Crush the Golden Oreos into fine crumbs using either a food processor or a plastic bag and a rolling pin.
In a mixing bowl, combine the crushed Oreos with melted butter to form the crust. Press this mixture into the bottom of a lined muffin tin and bake for 5 minutes at 350 degrees Fahrenheit.
While the crust is baking, prepare the filling by beating softened cream cheese until smooth in a separate mixing bowl. Once smooth, add in room temperature eggs, granulated sugar, and vanilla extract, combining thoroughly.
Gently fold in the red, white, and blue jimmies into the cream cheese mixture.
Pour the filling over the crusts in the muffin tin and bake for 20 minutes at 350 degrees Fahrenheit. Once done, let the cheesecakes cool to room temperature before chilling them in the fridge for a minimum of 2 hours.
When ready to serve, remove the chilled cheesecakes from the muffin tin and top with additional sprinkles if desired.
