  • 1/4 to 1/2 cup teriyaki sauce I highly recommend SoyVay!
  • 1 tablespoon sesame oil

Rice:

  • 1 can 14 ounces full-fat coconut milk
  • 1 1/2 cups water
  • 2 cups jasmine rice
  • 1/2 teaspoon salt optional, but it greatly enhances flavor

Toppings:

  • Zest of 1 lime
  • Fresh cilantro leaves
  • Thinly sliced jalapeño
  • Crispy fried onions
  • 1 teaspoon toasted sesame seeds optional, adds extra crunch

Instructions

Step 1: Prepare the Marinade

  • Start by marinating the pork. In a bowl, combine the sliced pork with teriyaki sauce. Make sure every piece is evenly coated. Cover the bowl and let it sit for at least 20 minutes. This allows the flavor to seep in nicely.

Step 2: Cook the Rice

  • While your pork is marinating, let’s focus on the rice. In a pot, combine the coconut milk, water, rice, and salt. Bring this mixture to a boil over medium heat. Once boiling, reduce to low, cover, and simmer for about 15 minutes or until the rice is tender and fluffy.

Step 3: Sauté the Pork

  • After the rice is cooking, heat the sesame oil in a large skillet over medium-high heat. Add the marinated pork to the skillet. Cook for about 5-7 minutes, stirring occasionally until it's cooked through and caramelized. The aroma will fill your kitchen—just wait!

Step 4: Add Pineapple

  • Once the pork is browned, throw in the fresh pineapple chunks. Stir for an additional 2-3 minutes. You want the pineapple to warm up and throw off some juice, mingling with the sauce.

  • Coconut milk can be replaced with light coconut milk for a lighter version, but the flavor may not be as rich.
  • For a spicier kick, consider adding red pepper flakes or sriracha to the marinade.
