Ingredients

Potato Cheese Dough:

  • 1 medium yellow potato about 250g
  • 1/3 cup cornstarch 50g
  • 1/2 cup cheddar cheese shredded (50g)

Deep Frying:

  • 500 ml vegetable oil or canola/peanut oil

Instructions

  • Prepare the Potato: Peel and chop the medium yellow potato into chunks. Place the potato chunks in a pot, cover with water, and boil until they are fork-tender.
  • Mash the Potato: Drain the boiled potatoes and mash them until smooth. You can use a potato masher or fork.
  • Add Cornstarch: While the mashed potatoes are still warm, add the cornstarch to create a dough-like consistency. Mix well until the cornstarch is fully incorporated.
  • Incorporate Shredded Cheese: Add the shredded cheddar cheese to the potato mixture. Knead or mix until the cheese is evenly distributed, and the mixture forms a smooth, pliable dough.
  • Shape the Sticks: Take small portions of the potato cheese dough and roll them into stick shapes, similar to traditional mozzarella sticks. You can adjust the size based on your preference.
  • Heat Oil: In a deep fryer or a heavy-bottomed pan, heat vegetable oil or canola/peanut oil to around 350°F (175°C).
  • Fry the Potato Cheese Sticks: Carefully drop the shaped sticks into the hot oil, ensuring not to overcrowd the pan. Fry until they turn golden brown and crispy, usually around 3-4 minutes.
  • Drain Excess Oil: Use a slotted spoon to remove the potato cheese sticks from the oil. Place them on a plate lined with paper towels to drain any excess oil.
  • Serve Warm: Serve the potato cheese sticks immediately while they are still warm and crispy.
